Thursday -”Meat”ball Sub Sandwiches
Friday -Portabella Mushroom Stroganoff with Whole Wheat Noodles
Saturday – TBD – we are leaving it open for whatever strikes our fancy this weekend.

The Perfect Apple
I have always been an apple fan. Some more than others…but now I have found my favorite, thus becoming the “perfect” apple in my book. What is this fabulous apple, you say? Well, of course it’s a hybrid…no…not in the green environment sense. It’s not even green – mostly.
It’s a Jonagold.
A Jonagold apple is a cross between a Jonathan and a Golden Delicious. It to me is slightly tart and sweet…not to mellow and not to crazy tart. They are also HUGE. I slice up one in the evenings and both of us snack away while watching a movie or a show. MUCH better than a bag of chips! Try one out! Try it kind of frozen for an even better texture. I promise I wasn’t paid to advertise this apple. I’m so happy with it….I have to share my happiness.

Breakin’ for Breakfast
At my house, cereal is mostly a small cup snack during the evening. We both LOVE cereal, but it’s not exactly take in the car food. As much as we try, we just can’t get breakfast to become a habit. My sweetheart and I are going to try a week of smoothies in the mornings. We are hoping that a liquid take-with-us breakfast will be a starting solution.
So…our ingredients are will be organic frozen berries, fresh bananas and soy milk. I will also probably be sneakin’ in some additional protein powder – in order to balance and regulate my blood sugar.
Any recipes you all suggest? Any combinations that you just love? Tips?
I’m open for other morning food suggestions. I know that I will be trying to make my own granola soon…because our current grab to go favorite is a pumpkin spice Kashi bar…and those add up on the budget meters.

Week – Jan. 3rd
Welcome readers,
This is my first posting and it’s soon to be back to work Monday…ugh.
As you will find out, I typically take the weekend off from cooking major items…usually you will find “Chick’ns” listed. They are a good alternative “chicken” meat…sometimes patties and sometimes buffalo “wings.”
I’ll be featuring some of the recipes randomly through out the week…if there is anything that you are particularly interested in knowing about, feel free to comment below.

Dear gentle readers,
I have decided to enlighten a few friends that wish to read this blog and discover that I do indeed, eat…and I eat very well. Perhaps, a little too much cheese, but hey!…I didn’t say Vegan. I will endeavor to post a weekly menu on Sundays that will range from Sunday to Saturdays, mostly because I grocery shop on Mondays. There will also be quick reviews of restaurants that we have found in Austin and frequent, every once and a while.
I would like to add a disclaimer and a promise – This blog isn’t anti-meat eaters. I don’t go around spouting the doom of all meat eaters and I’d like it known that my sweetheart (even though she’s a vegetarian) dreams about juicy steaks and sausage sandwiches, but still stays away for her own personal reasons. I shied away from meat little by little growing up. By the time I decided to go veg all the way, I was eating meat that didn’t look like an animal (aka – absolutely no bones…ew). I understand the love for quality meat and want you to know that sometimes I miss it, too…but I don’t think my life is any less without it…I can make some pretty kickin’ alternatives.
My hopes for this blogging journey are simple: 1. That you are able to see that my life isn’t any less without meat. 2. That I am able to grow in my vegetarian cooking. 3. That my food photography gets better, hehe.
